Discover Our Mouth-Watering, Hickory-Smoked, Hybrid-Style BBQ

We have created a type of hybrid-style BBQ by blending the flavors and styles of the BBQ meccas of the United States. The result is a menu full of hickory-smoked meats that will satisfy even the biggest BBQ cravings. 



Hickory-Smoked Meats
There are many different woods available for smoking meats, but we are partial to the unbelievable flavor you get from hickory. It's not necessarily a wood for beginners due to the intense, rich, full-bodied flavor it produces, but we've perfected the process. Combining the perfect cooking times with our special dry rub, as well as the inspiration from the BBQ meccas of the U.S.A, we are able to serve you the most delicious smoked meats in Des Moines



Our Hybrid Inspiration

  • Kansas City Style BBQ
    BBQ from Kansas City is smoked over a variety of woods, but it's the sauce that's the important part for them. This region is known for a tomato-based sauce which contains many different flavor profiles: sweet, spicy, and tangy.
  • St. Louis Style BBQ
    In St. Louis, many foods are grilled rather than cooked over indirect heat and smoke like most barbecued meats. The sauces from this area tend to be very sweet, slightly acidic, and sticky tomato-based. They are huge sauce fans and use it so heavily that they are said to consume more BBQ sauce per capita than any other city in the nation!
  • Memphis Style BBQ
    Pork is the most popular meat to BBQ in Memphis, focusing greatly on ribs and shoulders. Their meats are slow-cooked in a pit, and are served both "dry" (without sauce) and "wet" (with sauce.) The "wet" ribs not only get a delicious dose of sauce after cooking, but before and during as well.
  • Texas Style BBQ
    Fall-off-the-bone beef is the specialty of East Texas. They are also partial to hickory for smoking their meats. Marinades tend to be sweet and tomato-based, and a similar flavor is found in their generally thick sauces.

With those tasty traditions in mind, we created our own version that people find simply irresistible. After generously coating each meat in our special dry rub, we smoke it low and slow over hickory for maximum flavor and tenderness. To top it all off, it is served with our very own house-recipe BBQ sauce (which we make right here!) to compliment the already mouth-watering, hickory-smoked flavor.
