Every Wonder Why Bacon Is So Irresistible? This Is Why...

Just the smell of bacon wafting through the air is enough to make most people's mouths immediately water, and once you get a bite, it's tough to make yourself stop eating it! We witness bacon's effect on a daily basis here at our Des Moines BBQ restaurant each time we bring in a fresh batch from the smoker.

It's a natural reaction that is pretty hard to control, but have you ever wondered why bacon causes such an uncontrollable reaction? Wobbly Boots Roadhouse did a little research on the subject, and we found out there are actually some scientific reasons why this particular food is so very appealing.

The Science of Bacon
Some foods contain a single molecule that is responsible for what you taste. For example, bananas and almonds are very distinctive flavors that mainly rely on a single molecule for flavor, but as yummy as they may be to you, those are foods that aren't too difficult to resist.

Bacon, on the other hand, has a phenomenal combination of factors that come together to create that crispy goodness. The best explanation that we found came from an online article from the BBC. It gets a bit scientific, but it's extremely interesting for any bacon-lover.

" 'Some of the major flavour players are the result of the pork belly's fat breaking down,' says Guy Crosby, food scientist and science editor at America's Test Kitchen. 'It's not just the white marbling that's in play. The cell membranes of the muscle tissue contain fatty acids that disintegrate during cooking to yield a bouquet of flavourful compounds like aldehydes, furans, and ketones. By themselves, some of these molecules have distinct tastes or smells – furans have a sweet, nutty, caramel-like note, aldehydes a green, grassy note, and ketones tend to be buttery – but whatever they are doing together seems to be key. If any of these classes of molecules were missing from the overall bacon flavour, you would notice it.' "

So basically, the combination of sweet, nutty, caramel-like notes + green + grassy notes + a buttery flavor all come together in a magical way to create the magnificent bacon flavor we all know and love! The kind that you get from our family-friendly restaurant in Des Moines takes bacon's flavor one step further because we prepare it in a smoker over hickory.

Hickory-Smoking Makes It Better
Even though bacon seems like a food that couldn't possibly get any better than it already is, the Boot goes and does it! The rubs and spices that we add to our bacon play a part in the final flavor it takes on. The chemical reactions of everything combined create a variety of tastes, pointing the various molecules in different directions.

The act of smoking bacon causes the meat to take on a distinct set of flavor compounds. The best hickory-smoked meats in Des Moines go through a long, slow cooking process, making them the best in the Midwest. The smoke created by our hickory wood releases both acrid and sweet-smelling compounds that combine to add that amazing extra flavor that puts our bacon far ahead of any other you've ever tasted.

Bacon at the Boot
The menu at Wobbly Boots BBQ features quite a few items that have to give the credit for a portion of their great taste to the addition of bacon. There are plenty here to get you started, but if you see another menu item that you want to have bacon added to, we can definitely do that for you.

  • Texas Fries
  • Turkey Bacon Ranch Wrap

  • Wobbly Melt
  • El Diablo Burger
  • Bacon Egg & Cheese Burger
  • Wobbly Style Club Sandwich

Wipe the drool off your chin, hop in the car, and get yourself to Wobbly Boots Roadhouse in Clive. If you're a bacon-lover already, come on in and give our fantastic version a try. If you're not big on bacon, we're willing to bet that ours just may change your mind.

What Hits the Spot in the Winter? Warm, Southern Comfort Foods!

It doesn't have to be cold outside for you to enjoy Wobbly Boots Roadhouse's delicious Southern Comfort Food menu, but eating a great big hot plate of it on a winter's day seems to make it taste even better than usual! Our Des Moines BBQ restaurant is the perfect place to go when you're craving a mouthwatering meal to combat winter's icy chill.

In addition to being served hot so that it warms your body up, "comfort foods" also offer a cozy feeling that resembles a great big hug to warm up your soul too. The dictionary describes comfort as " a state of ease and satisfaction; a feeling of relief or consolation; to soothe, console, reassure, or bring cheer to." A comfort food is categorized as a dish that is fairly simple to prepare (especially when you let Wobbly Boots BBQ take care of the cooking) and has some type of nostalgia associated with it for you. You know, the stuff like Mom used to make!

Comfort Foods at the Boot
Three of the four fantastic menu items below are prepared in that wonderful smoker that also makes our hickory-smoked BBQ so irresistible. The last one is hand-breaded and deep-fried to perfection. YUM!

Smoked Meatloaf
Not exactly like mom made, but every bit as delicious! Our handmade meatloaf is slow-roasted over hickory. Absolutely one of our best dishes and a customer favorite. It is served open-faced with homemade smashed potatoes, brown gravy, and green beans.

Smoked Turkey Dinner
A generous portion of our all white meat smoked turkey breast served open-faced with smashed potatoes, then covered with delicious turkey gravy and paired with a side of our homemade cheesy corn.

Prime Rib Hot Beef
Our house-smoked Prime Rib thinly sliced and served open-faced on white bread with smashed potatoes, beef gravy, and green beans. Stick to your ribs delicious!

Chicken Fried Chicken
A juicy chicken cutlet tenderized and hand-breaded, then fried to golden perfection. Next we add some of those incredible smashed potatoes and slather it all with white country gravy and serve it with a side of green beans.

Does That Make You Hungry?
It should! If you've had the pleasure of dining at our family restaurant in Des Moines before, you already know that we only serve the most delicious, handmade dishes full of incredible flavor from our kitchen. If this is your first exposure to Wobbly Boots Roadhouse in Clive, you should know that even though everything from our Southern Comfort Food Menu sounds and looks awesome, that's nothing compared to how amazing it actually tastes!

The same can be said about our entire menu full of a wonderful variety of dishes made to please everyone in your group. Call your friends or load your family in the car and get everyone here for a fantastic meal that will leave you all anxious to come back again soon for even more!

5 Reasons That We Love Iowa in the Fall

We absolutely love working at the best BBQ restaurant in Des Moines this time of year because Iowa is an awesome place to experience the season of autumn. This blog is filled with some of Wobbly Boots Roadhouse's favorite things about fall, and we're willing to bet they are some of your favorite things too.

Festivals
If you're not tailgating, there's a good chance you're out picking apples or exploring a pumpkin patch. Des Moines has plenty of that to offer this time of year, and it's not hard to find a festival featuring those things and much more. You can find an entire list of things to do to fill your season with fun when you visit Fall in Des Moines online.

Football
If you're not a fan of college football in Iowa, then you are missing out on a truly amazing experience. The Iowa Hawkeyes and the Iowa State Cyclones always keep things exciting for us, and the best place to watch football in Des Moines is right here at the Boot! We've got 17 televisions placed all around the restaurant so there's not a bad seat in the house, and a family friendly atmosphere so that even the youngest football fans can enjoy a game with us. As a matter of fact, our customers are the best fans around, so if you can't get to the stadium in person, watching right here is definitely the next best thing!

Vibrant Colors
Autumn in the Midwest is a sight to behold. The leaves are changing into all kinds of gorgeous colors everywhere that you look. The scenery doesn't get much better than an autumn view of the Iowa countryside. There are plenty of places to enjoy a leisurely drive through the country, and Des Moines boasts over 600 miles worth of trails where you can stroll or take a bike ride and enjoy nature's show.
Crisp, Cool Air
The temperatures are awesome too. Summers can get extremely hot around here, and winters can be incredibly cold, but fall is just right! Sunny days have just a slight chill to them, and the humidity levels drop noticeably. It's perfect for enjoying an afternoon outside or an evening by the campfire.

Hot, Tasty Treats
Once you head indoors from the cooler weather, a hot delicious meal is the perfect thing to warm you up from the inside out. This is especially true at Wobbly Boots BBQ, where our hickory-smoked meats are just the thing to do the trick! Our Southern Comfort Food menu items really hit the spot on a chilly day, like the Smoked Meatloaf or the Smoked Turkey Dinner. (Both year-round favorites!) We've even got bowls of the best Baked Potato Soup in Des Moines hot and ready for you.

Plan a day for yourself to get out and experience everything that there is to enjoy about the Des Moines area this time of year. If you make it happen on a Saturday when college football is playing at Wobbly Boot Roadhouse, you can get all of these awesome things accomplished at once! It's a great time of year to be in Iowa, and we want to enjoy it with you.

The History of the Classic Club Sandwich

There are lots of "classic" dishes on the menu at our Des Moines BBQ restaurant that most people are familiar with without having to read the description. Even though we put our own delicious Wobbly Boots Roadhouse twist on these dishes, they're still recognized by nearly everyone. While the names are well-known, the history of these dishes often remains a mystery.

That's where we come in! Learning the origins of the different foods we choose to serve at Wobbly Boots BBQ is kind of a hobby of ours, and we love sharing our findings with all of you. Today we're turning our inquiring minds towards the piled high, chock full of flavor, Club Sandwich.

Club Sandwich Basics
The basic ingredients that you are most likely to find in a Club Sandwich, no matter where you go, are: 2-3 slices of bread (often toasted,) turkey, bacon, lettuce, tomato, and mayo. It's kind of like a super-sized BLT with poultry added.

It can be cut into halves or quarters, and it needs to be held together with toothpicks to contain the goodness piled inside. Depending on where you go, these ingredients will vary slightly. (Just wait until you see what we put in ours! Keep reading...)

Club Sandwich Origins
As with just about every food we delve into the history of, there are conflicting origin stories. One source states that the sandwich may have been invented by the chef at the Union Club of New York City. This is because the earliest known real-life reference was a recipe that began, "Have you tried the Union Club sandwich yet?" The earliest reference to the fictional sandwich appeared in "Conversations of a Chorus Girl" by Ray Cardell in 1903.

Other sources swear that the Club Sandwich made its first appearance in the late 19th century in an exclusive Saratoga Springs, New York gambling club. Regardless of who gets the credit, this incredible sandwich has been spotted on menus across the United States as far back as 1899.

Historically, chicken was used instead of turkey, but over time turkey won out as the more popular choice. The sides most often served with Clubs are coleslaw, potato salad, or french fries.

The Wobbly Style Club
Our version of the Club Sandwich has everything that a regular Club should, but we didn't stop there! We add a couple of delicious twists that makes our Wobbly Style Club stand out from the rest.

Instead of three slices of bread, we only use two toasted pieces of sourdough. This leaves more room in the middle for the really good stuff! The turkey and bacon are both prepared in our smoker, and we've also added our incredible hickory-smoked ham to the recipe. We use fresh lettuce and tomato, but we've also added Mozzarella cheese, plus traded out plain mayo for our amazing avocado mayo.

As for side dishes, our homestyle choices do include creamy coleslaw, gourmet potato salad, and seasoned fries, but you are free to pick from our other options too. These include: baked beans, green beans with bacon, smashed potatoes & gravy, cheesy corn & ham, baked potato, and homemade mac & cheese. In our opinion, as well as our happy customers, those are all excellent choices!

So the next time you are enjoying a gigantic Wobbly Style Club from the best family restaurant in Des Moines, you'll know that this awesome sandwich has a long history with many variations, but none quite as tasty as we do it here at Wobbly Boots BBQ! Just be warned, you need to either come hungry, bring a hungry friend to share with, or expect to be taking home a doggy bag!

  5. The Declaration was signed by 56 men from 13 colonies.
  6. They didn't all actually sign it on the 4th of July. There has been debate about when the actual date was, or if all of the signatures happened on the same day.
  7. Two U.S presidents signed the Declaration of Independence: John Adams and Thomas Jefferson.
  8. Strangely, those same two U.S. presidents both died on the 4th of July, 1826, which was also the 50th anniversary of the Declaration.
